The theoretical calculations of binding metal ions with milk proteins are given in the article. The interaction of heavy metals with chain-terminal amino and carboxyl groups of amino acid is described to form chelate compounds (chelates). On the basis of experimental data the assessment of cumulative properties of individual milk fractions is given.
