Technological potential of waste from cutting a snow crab (Chionoecetes opilio)

The article presents the results of the study of size-mass and chemical composition of waste from cutting the snow crabopilio, obtained in the production of boiled and frozen limbs. As waste, the shell of the cephalothorax, gills, and the entrails of the crab were used. It is experimentally established that the share of the shell is about 50% of the waste mass; about a third falls on the inside, the remaining part - gills. The waste contains proteins (14,00 ± 0,05%), lipids (3,15 ± 0,1%), minerals (8,33 ± 0,25%) and carbohydrates (0,52 ± 0,05%). The biological value of waste is confirmed by the data of amino acid composition of proteins, fatty acid composition of lipids and the content of macro-and microelements. The obtained results determine the technological potential of the waste from the cutting the snow crab opilio as a raw material for the production of biologically valuable products.
