Choice of the coagulation method of dairy-soybean base for getting enriched cheese product

The article presents the results of a study of obtaining protein masses from skimmed cow’s milk and the food soybean base in various ratios. The effect of coagulants - 4% solution of calcium chloride and acid whey - on the consistency of the obtained protein masses is studied. Organoleptic characteristics of the test specimens were determined by a sensory method, and a tasting evaluation was conducted by the commission. Values of such physical and chemical indicators as titrable acidity and a mass fraction of moisture are established. Organoleptic, physical and chemical and microbiological indicators and also indicators of safety of «Birch Bark Extract» additive are studied. Based on the results of the study, it was established that it is advisable to use sour milk whey as a coagulant. The best organoleptic and physico-chemical indicators had a sample of protein mass, obtained from 70% skimmed milk and 30% of the food soybean base, which had the highest score during the tasting evaluation. According to studies, it has been established that the supplement “Birch Bark Extract” is safe for health and can be used to enrich cheese products with antioxidants.
