The use of artificial forms of physiologically active substances in agriculture in the cultivation of fruits and vegetables and grain products is increasing every year. They are widely used mainly in several directions: to accelerate growth and development, stop growth and accelerate maturation, to control weeds. As you know, fruits ripen in different ways. For example, if summer apples ripen on a tree, winter apples ripen some time after harvest. To artificially bring unripe fruits to ripening, exposure to ethylene gas can accelerate the ripening of bananas, lemons, dates, tomatoes and other fruits. The essence of this method is that under the influence of ethylene gas, the permeability of the cytoplasm increases, the flow of oxygen into the cells is accelerated, the activity of enzymes is increased, redox processes are accelerated, and as a result, the ripening of fruits is accelerated from the rapid decay of organic acids, tannins, and such complex substances like pectin. This method consists in accelerating the final ripening of fruits harvested for transport in their raw state.
