Water is needed for development of all living organisms, in different amounts and forms contained in agricultural plants and animals, in food raw material and prepared foodstuffs. In living organisms maintenance and state of moisture are regulated by natural laws that hinder to the use of this moisture pathogenic microorganisms, foodstuffs are not protected these laws, a question gets up about the artificial adjusting of amount and state of water. Diminishing of humidity reduces activity of pathogenic microorganisms, promotes safety and increases expiration of food foods dates, but conducts, as a rule, to the change nourishing and taste.
