In article features of development of the food market, and an estimation of level of consumption of a foodstuff of Sakha Republic are considered. The influence of incomes on the structure of food consumption by the population is reflected. It has been established that the food supply is influenced by regional peculiarities of the diet. The results of studies on the study of actual nutrition and food habits among various population groups are presented. The author substantiates the need to optimize the structure of the population's nutrition and improve the quality of food products and the level of its safety.
